Originally founded as a food truck in 2009, the Denver Biscuit Company is a neighborhood favorite and always busy. Located in the back of Atomic Cowboy, it’s all about the biscuits and there are a myriad of menu options to experience its flaky goodness. From sandwiches with buttermilk fried chicken, ham, and cheddar cheese, to classic Southern dishes like shrimp and grits in a biscuit bowl, the biscuit is celebrated at the DBC and shames the wannabes. Portions are huge, so share with friends or expect to have leftovers. They are only open for breakfast and lunch, so plan to come early and secure your spot, as seating is on a first-come first-served basis.
